Green Scallop Aguachile

This recipe comes together quickly with just a few simple, super-fresh ingredients. It can be made ahead of time and travels well. Take it to the beach or serve it at your next gathering alongside the salsa and guacamole. If you don’t have scallops, you can substitute spot prawns or fresh sea bass. 

Ready in 25 minutes Makes 6-8 servings as an appetizer 

  • 1 large cucumber, diced
  • 2 large avocados, diced
  • 1 red onion, diced 
  • 3 cloves garlic 
  • 2 jalapeños, seeded and coarsely chopped 
  • ½ cup coarsely chopped cilantro 
  • 1 cup lime juice 
  • 1 teaspoon sea salt 
  • 1 pound fresh scallops, coarsely chopped into chunks 
  • Flaky salt such as Maldon for finishing

STEP 1 Place the diced cucumber, avocados and red onion in a large mixing bowl and set aside. 

STEP 2 Make the chile water. Put the garlic cloves, jalapeño and chopped cilantro in the blender along with the lime juice and salt. Pulse until the mixture is smooth and well blended. 

STEP 3 Add the chunked scallops to the bowl with the vegetables and top with the chile water. Use a large spoon to mix everything together until evenly combined. Season to taste with more sea salt. Finish with flaky salt and serve with corn chips.
