Sustainably farmed by Baja Shellfish Farms in the Sea of Cortez, these clams are hand harvested, rather than dredged, to ensure the habitat is left unharmed. They are tender and sweet with a mild, briny finish. They’re excellent steamed with lots of garlic and white wine or served ice cold on the half shell with lime and Tapatio. Clams arrive in two-pound packages.
